No-Bake Breakfast Cookies

I’ve always liked the idea of breakfast cookies… because cookies for breakfast, you know? It’s a great idea – an option that’s healthy enough to start your day but still tastes as delicious as a treat. I can totally get behind that. But every recipe I’ve tried for a supposed “breakfast cookie” is one I’ve never really wanted to try again because while they might have been healthy, they left a lot to be desired for my tastebuds. Until I tried these, that is.

These are delicious. As in, my daughter ate one every morning until they were totally gone and then we immediately made a new batch. There’s no artificial sugar involved, just one tablespoon of honey (which you can sub for maple syrup if you’d like) and a handful of other good-for-you ingredients. Oh, and you don’t have to bake a single thing. They take less than ten minutes to mix up and shape, so the preparation is as easy to love as the taste.

They’re made up of peanut butter, rolled oats, honey, vanilla, chia seeds, chopped nuts, and some dark chocolate chips. If you’re on a quest for a healthy breakfast cookie, you’ll want to seek out peanut butter and dark chocolate chips with little to no added sugar, but there are plenty of great options on the grocery store shelves these days.

You simply stir the ingredients together, shape them into ‘cookies’ and you’re good to go. You can eat them right away, or you can chill them for a bit. Chilling them helps the oats soften a tad and gives them a chewier consistency. They’re hearty and healthy and filling, but most importantly they’re seriously yummy. They’ve become a fast favorite in my house!

No-Bake Breakfast Cookies

10 minutes to prepare serves 8

Ingredients

  • 1 cup creamy peanut butter
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons chia seeds
  • 1 cup old-fashioned oats
  • 1/2 teaspoon salt
  • 1/3 cup dark chocolate chips
  • 1/4 cup nuts, chopped

Preparation

  1. Add peanut butter, honey, and vanilla to a large microwaveable bowl and microwave for 20 seconds.
  2. Add chia seeds, oats, salt, chocolate chips, and nuts and stir until well combined.
  3. Roll mixture into 8 balls and place on a parchment-lined baking sheet. Flatten balls slightly with the palm of your hand.
  4. Chill in fridge until set, at least 1 hour. Enjoy!
