Butter Swim Biscuits

I mean, the name says it all… Butter Swim Biscuits. If you can choose a regular old buttermilk biscuit or one that’s been baked in a sumptuous bath of butter, what are you going to go with? It’s an easy choice. Because the only thing better than butter is more butter.

You guys, these biscuits are SO GOOD. They rise sky-high and are fluffy and light, but since they were basically bathed in butter, all the exterior surfaces are lightly crisped and a delicate, buttery flavor runs throughout every bite. They also happen to be easier to make than a simple drop biscuit. There’s no rolling or cutting out… you don’t even have to portion out the dough. Here’s how it goes:

You mix together the dry ingredients – flour, baking powder, sugar, and salt – and then pour in some buttermilk and stir just until the dough will hold together.

You pour a stick of melted butter into the bottom of a baking pan and then add the dough to the pan.

As you spread the dough out to the corners, the butter starts to surround it, so it covers every nook and cranny. You cut the dough into equal squares, so it’s portioned and easy to pull apart later and it heads into the oven.

When it emerges, the biscuits have risen to flavorful, fluffy heights with a lightly craggy surface that’s become golden brown baking in that butter bath.

They’re seriously easy and seriously delicious. I just keep wondering why I wasn’t aware of this technique sooner!

We all love a good biscuit, but I can promise you that once you try a biscuit that’s taken a swim in some butter, it’s going to be hard to go back to anything else.

Butter Swim Biscuits

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 cups buttermilk
  • 1/2 cup (1 stick) butter, melted
  • 4 teaspoons baking powder
  • 1 1/2 tablespoons granulated sugar
  • 2 teaspoons salt

Preparation

  1. Preheat oven to 450°F.
  2. In a medium bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Add buttermilk and mix just until a moist dough is formed.
  4. Pour melted butter into an 8x8-inch baking dish and place dough on top of melted butter. Using a spatula, spread dough evenly across pan until it touches the sides.
  5. Cut dough into 9 equal squares and bake until golden brown, 20-25 minutes. Enjoy!
